GOAN PRAWN CURRY

Preparation Method :

  • Heat the oil in a non-stick saucepan and brown the onion, about 10 minutes.
  • Stir in the garlic paste, curry leaves, chillies and mustard seeds, fry for about half a minute.
  • Add the curry paste and half a cup of the water. Simmer for about 8-10 minutes, add little water if needed.
  • Stir in the coconut milk and bring to the boil for 2-3 minutes.
  • Add the tamarind to taste. Stir in the remaining spices, adjust the seasoning, simmer for about 3-5 minutes
  • Add in the prawns, lower the heat, cover and simmer for about 3-5 minutes or until the prawns are almost cooked.
  • The gravy should be smooth and thick to eat with rice. Serve hot.

INGREDIENTS

  • 500 grams raw prawns, shelled, washed and de-veined
  • 250 ml coconut milk
  • 25 ml IDHAYAM sesame oil
  • 50 grams onion, finely chopped
  • 100 grams Curry Paste
  • 100 ml hot water
  • 1 teaspoon garlic paste
  • ½ teaspoon Dried mango powder
  • 1 teaspoon brown mustard seeds
  • 50 ml tamarind juice
  • 1 teaspoon garam masala
  • Freshly ground black pepper and salt to taste
  • Few fresh curry leaves
  • Dried red chilli flakes to taste
