SPICY PORK

Preparation Method :

  • Heat the ghee and fry the onions to a golden colour.
  • Add pork and ground paste. Cook till the pork is golden in colour. Adjust seasoning with chilli and salt.
  • Cover with hot water. When the pork is tender and the gravy thick, mix in the potatoes. Serve hot.

INGREDIENTS

  • 1 kg pork
  • 225 grams baby potatoes, boiled, peeled and deep fried
  • 50 grams ghee
  • 5 onions, sliced
  • 1 teaspoon turmeric powder

Roasted and Ground

  • 8-10 red chillies
  • 3 tablespoon vinegar
  • ½ teaspoon cumin seeds
  • 2 tablespoon coriander seeds
  • 1-inch piece cinnamon stick
  • 4 cloves
  • 4 cardamoms
  • 10-12 peppercorns
  • ½ teaspoon mustard seeds
  • 10-12 flakes garlic
  • 2-inch piece ginger
  • 4 green chillies, slitted
  • Salt to taste
