SPICED ROAST PIGLET

Preparation Method :

  • Bring a pot of water to boil with the cinnamon, cardamom, cloves, bay leaf, star anise and salt. Gently lower the pork in it and reduce the heat.
  • Simmer to low flame and cook for about 15-20 minutes and then remove the pork and place it aside, allow it to cool.
  • Pound the garlic with the chilli flakes and peppercorns. Add the vinegar and half the oil and marinate the pork with the spice mix at least for an hour or two.
  • Roast the pork on an open spit for 20-25 minutes or until golden and done thoroughly. Serve with a crisp green salad and mustard.

INGREDIENTS

  • 6 kg Piglet, washed and cleaned
  • 150 grams garlic, peeled
  • 2 tablespoon Red chilli flakes
  • 25 grams Crushed black peppercorns
  • 50 ml Malt vinegar
  • 50 ml Cooking oil
  • 4-5 sticks Cinnamon
  • 10 pods Cardamom
  • 9 Cloves buds
  • 2 Bay leaves
  • 6 Star anise
  • Salt to taste
