SPICED PORK SAUSAGE MEAT

Preparation Method :

  • Place the pork in a perforated tray and place a weight on top of it for a day, make sure to turn it over every 3-4 hours or till most of the liquids have drained out of the meat.
  • Wash the meat well and pat dry with a kitchen paper towel and the cut the meat into cubes.
  • Rub the spice paste into the meat along with the oil. Leave this pork mixture in a sterilized jar to pickle for up to a month before using.

INGREDIENTS

  • 1 kg Boneless pork, incised and coat with salt
  • 50 ml Cooking oil

Spice Paste

  • 1½ teaspoon Turmeric powder
  • 25 grams Dried red chillies
  • 2 tablespoon Peppercorns
  • 2 teaspoon Cumin seeds
  • 2 teaspoon Cloves
  • 25 grams Peeled garlic
  • 150 ml Malt vinegar
  • 3-5 sticks Cinnamon
  • 10-12 buds Cardamom
  • Salt, to taste
