SORPOTAEL

Preparation Method :

  • Grind the chillies, peppercorns with garlic, ginger, cardamom, cumin, cloves and the malt vinegar to a smooth paste.
  • In a pan, place the pork fat and stir them till the fat starts melting. Increase the heat and add the rest of the pork and the liver and stir till all the meat appears golden and crisp.
  • Remove the meat from the fat and spread it on an absorbent paper towel to drain off the excess fat.
  • Reheat the fat and fry the onions till they are golden. Add the chopped chillies and ground paste and simmer on medium heat stirring occasionally.
  • When the fat starts rising out of the spice paste, add the meat and salt. Stir for a minute or two and then add half a cup of water and cook, covered for 5-7 minutes.
  • Taste and adjust the seasonings. When the sauce thickens and coats the meat, remove from the heat and serve hot.

INGREDIENTS

  • 1 kg Pork with fat, cut into cubes, washed and dried
  • 220 grams Chopped onions
  • 145 grams Pork liver, cut into cubes
  • 50 ml Malt vinegar
  • 25 grams Dried red chillies
  • 1 tablespoon Black peppercorns
  • 25 grams garlic cloves, peeled
  • 2 tablespoon ginger, peeled
  • 8-10 pods Cardamom
  • 2 teaspoon Cumin seeds
  • 10-12 buds Cloves
  • 2 tablespoon Chopped fresh chillies
  • Salt to taste
