PORK VINDALOO

Preparation Method :

  • Heat the oil in a heavy-bottomed pan and slide in the meat. Stir at least for 3-5 minutes or until the meat appears golden.
  • Add the onions, when the onions are golden, add in the spice paste and continue to stirring for another 3-5 minutes.
  • Add half a cup of water and cook for 10-12 minutes stirring occasionally. Taste and adjust seasonings and add water if needed. Serve hot.

INGREDIENTS

  • 750 grams Pork cut into cubes, cleaned and marinate with salt
  • 150 grams Chopped onions
  • 25 ml IDHAYAM Sesame Oil
  • 25 grams Dried red chillies
  • 1½ tablespoon Sugar
  • Salt to taste

Ground to Paste

  • 2 tablespoon Black peppercorns
  • 25 grams Peeled garlic
  • 25 grams Peeled ginger
  • 2-4 Cinnamon sticks
  • 8-10 buds Cloves
  • 1 tablespoon Cumin
  • 5 tablespoon Vinegar
