PORK VINDALOO WITH GINGER AND GARLIC

Preparation Method :

  • Marinate the pork with a little turmeric, salt, vinegar and garlic ginger paste and keep it aside for about 20 minutes.
  • Grind all the ingredients to a fine paste with vinegar.
  • Heat the oil and fry onions with chopped ginger and garlic until soft and golden brown.
  • Then add in the chopped tomato to it, followed by the marinated pork to it and stir fry on medium heat stirring frequently until water dries.
  • Finally add in the ground masala and mix well on low flame for a few minutes.
  • Add measured water and cook the pork till tender.
  • Adjust seasoning, add salt, sugar and little vinegar if needed.
  • Serve hot with par boiled rice or Goan bread.

INGREDIENTS

  • 1 kg Pork meat, Trim off excess fat and cut in cubes and wash.  
  • 75 grams Onions, sliced
  • 3 tablespoons Ginger and garlic, chopped
  • 1 tablespoon Turmeric powder
  • 50 grams Tomatoes, chopped
  • 75 ml Toddy vinegar for marination  
  • Salt to taste
  • Cooking oil for frying

For Vindaloo Masala

  • 200 ml Toddy vinegar
  • 24 flakes Garlic    
  • ½ tablespoon Cumin seeds    
  • 12 Cloves
  • 10-12 Red chillies (soaked)    
  • 5 inches Cinnamon stick    
  • 20 Peppercorn    
  • 10 Green cardamom  
  • 2½ inches Ginger
