PORK COOKED WITH JACKFRUIT SEEDS

Preparation Method :

  • Heat the oil in a thick-bottomed pan and drop in the cumin, peppercorns and dried red chillies.
  • When they crackle and begin to change colour, add the onions and cook them on a gentle heat till they are golden.
  • Add the pork with garlic, ginger, jackfruit seeds, turmeric powder and salt, stir them on medium heat for 5-7 minutes.
  • Add a cup of water and the kokum and simmer to low flame for 20-22 minutes or until the moisture has been absorbed.
  • Check and see if the jackfruit seeds are tender and cooked through and adjust the seasonings. Remove from the heat and serve hot.

INGREDIENTS

  • 1 kg Pork cut into cubes
  • 225 grams Chopped onions
  • 220 grams Jackfruit seeds
  • 50 ml Cooking oil
  • 2 tablespoon Chopped garlic
  • 1 tablespoon Chopped ginger
  • ½ teaspoon Cumin seeds
  • 1 tablespoon Black peppercorns
  • 8-10 Dried red chillies  
  • 1 teaspoon Turmeric powder
  • 10-12 Dried kokum
  • Salt to taste
