MANGO PICKLE

Makes :
A jar

Preparation Time :
3 hours

Cooking Time :
10 minutes

Preparation Method :

  • Heat three cups of water and bring it to boiling point. Now put in the cubed mango pieces and cover. Allow it to stand for about 2 - 3 hours till the mango turns soft. Drain the excess water.
  • Add a little ghee in a pan and fry the peppercorns, methi, dry red chillies and asafoetida. Cool and grind the mixture to a powder.
  • Fry the slit green chilies in the remaining ghee. Then add in the jaggery with a cup of water. Cook on a slow fire stirring continuously till the mixture becomes thick and sticky.
  • Add the drained mangoes to the mixture. Finally add in the powdered spices and salt. Cook for about 3 - 5 minutes, then remove from fire and cool. Cool and store in pickle jars

INGREDIENTS

  • 2 Raw mangoes, Peeled and cut them into small cubes. Marinate with salt     
  • 6 Red chilies    
  • 4 Green chilies    
  • ½ teaspoon Peppercorns    
  • ¼ teaspoon Asafetida
  • 600 grams Jaggery    
  • ½ teaspoon Fenugreek seeds    
  • 2 tablespoons Ghee    
  • 900 ml Water    
  • Salt to taste
