FRESH FISH PICKLE

Makes :
1.2 Kg.

Preparation Time :

Preparation Method :

  • Marinate the fish pieces with the turmeric powder and half the salt and leave it in a cool place for 20-30 minutes.
  • Heat the oil in a non-stick pan and slide in the fish pieces one at a time.
  • Fry them on medium heat and flip them over to ensure that both sides are golden and crisp. Remove from the oil and spread on an absorbent paper towel to drain off the excess oil.
  • Grind the chillies, cumin, ginger and garlic with the malt vinegar to obtain a smooth paste.
  • Reheat the oil in the pan and fry the paste on medium heat for 5-7 minutes stirring occasionally.
  • When the paste turns thick and dark and the oil starts to separate from the sides, add in half a cup of water and bring the sauce to a boil.
  • Slide in the fish and simmer till the sauce coats the fish. Taste and adjust seasonings.
  • Cool down and store in sterilized jars where it will keep for a month under refrigeration.

INGREDIENTS

  • 1 kg Pomfret or any white fish, cleaned, washed, cut into pieces
  • 350 ml Malt vinegar
  • 50 ml Cooking Oil
  • 1½ teaspoon Turmeric powder
  • 25 grams Peeled garlic
  • 30 grams Dried red chillies
  • 1 teaspoon Cumin seeds
  • 1 tablespoon Peeled ginger
  • Salt, to taste
