Preparation Method :

  • Heat oil in a pressure pan.
  • Add dry red chillies, Cinnamon, Fennel seeds and fry till the turn black but take care not to burn them.
  • Add shallots, curry leaves and garlic. Sauté until brown.
  • Add turmeric powder, mutton cubes and enough water to cook the mutton.
  • Add salt and pressure cook until 5 whistles.
  • Remove mutton cubes and reduce the gravy by increasing the flame. Return the mutton pieces to the gravy.
  • Cook until mutton becomes soft and gravy coats the pieces.
  • Goes well with boiled white rice and even chapatis.

INGREDIENTS

  • 2 kilogram boneless mutton-washed and cut into cubes.
  • 300 grams pearl onions, peeled, split into two
  • 15 pods garlic peeled and split into two
  • 50 dry red chillies de seeded and cut into halves
  • 15 Curry leaves
  • 1 stick Cinnamon
  • 2 teaspoon Fennel seeds
  • ½ teaspoon turmeric powder
  • Sesame Oil
  • Salt to taste
