LAMB WITH CURRY LEAVES AND COCONUT MILK

Preparation Method :

  • Heat the oil in a heavy bottomed pan and drop in the coriander and cumin seeds. When they splutter, add the onions and cook on medium heat till golden.
  • Add the garlic and when it changes colour, add the chillies, turmeric and lamb. Stir for a minute or two.
  • Add in the tomatoes and salt. Simmer to low flame and cook until the tomatoes are pulpy. Stir occasionally to prevent the spices from burning.
  • Add the black pepper, ginger and little water and cook for about 40-45 minutes or until the lamb is tender and done.
  • Sprinkle in the curry leaves, drizzle the coconut milk and bring the sauce to a boil. Taste and adjust the seasonings and serve hot.

INGREDIENTS

  • 1 kg Lamb, cleaned, washed and cut into medium size chunks
  • 50 ml Coconut oil
  • 150 grams onions, chopped
  • 150 grams tomatoes, chopped
  • 4 teaspoon ginger, chopped
  • 2 tablespoon garlic, chopped
  • 2 tablespoon fresh chillies, chopped
  • 75 ml Coconut milk
  • 2 teaspoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • 1 teaspoon turmeric powder
  • 1 tablespoon Crushed black pepper
  • Few Curry leaves
  • Salt to taste
