HEAD CURRY

Preparation Method :

  • When the meat is cooked, remove all the skull bones. Remove skin on tongue, palate and ear lobes.
  • Heat the oil and add the coarsely ground onion, ginger, garlic and curry leaves.
  • Cook till the raw smell disappears. Add the tomatoes and all the spices. When soft add the meat. Cook for 5 minutes.
  • Stir in the tamarind and cook till the curry is thick. Serve decorated with coriander leaves.

INGREDIENTS

  • 1 head of goat, exclude brain, cleaned, cut into big pieces and cooked
  • 50 ml Peanut oil
  • 1 onion
  • 1-inch piece ginger
  • 8-10 flakes garlic
  • 50 ml tamarind juice
  • 150 grams tomatoes
  • ½ teaspoon turmeric powder
  • 6-8 red chillies
  • 1 teaspoon garam masala
  • A few curry leaves
  • 1 teaspoon coriander powder
  • 1 teaspoon ground cumin seeds
  • Salt to taste
