FEIJOADA

Preparation Method :

  • Heat the oil in a saucepan and lightly saute the chopped onions till translucent.
  • Add the bacon and fry till it starts leaving fat. Add chopped tomatoes and saute for a little while.
  • Add the sausages with boiled beans and cover with about 3 cups of water.
  • Simmer on a slow flame till the sausages are cooked and beans tender.
  • Add in required water. Cook till the gravy is thick.
  • Serve hot with crusty bread or steamed rice.

INGREDIENTS

  • 32 rosary sausages, skin removed
  • 150 grams Dried kidney beans, soaked overnight and boiled
  • 250 grams rashers Bacon, Finely chopped
  • 50 grams Onions, Finely chopped
  • 50 grams Tomatoes, Finely chopped
  • 1 tablespoon Cooking Oil
  • Salt to taste
