SPICY FISH CALDINE

Preparation Method :

  • Heat the oil in a saucepan. Add the onion and fry until golden.
  • Grind the chillies, whole spices and the poppy seeds or almonds to a fine powder.
  • Add the garlic and ginger to the onions and gently cook until the raw smell of the garlic has disappear.
  • Add the spice powder, turmeric and salt and cook, stirring, for about a minute.
  • Add the coconut milk with 2 cup of water and the tamarind paste. Bring to boil and simmer to low flame for about 3 - 5 minutes.
  • Adjust the seasoning. Add the fish and cook until done. The sauce should be light and creamy. Serve scattered with chopped coriander.

INGREDIENTS

  • 500 grams steaks or firm white fillets
  • 350 ml coconut milk or more for a creamier curry  
  • 3 tablespoon Cooking oil
  • 1 small onion, sliced
  • 4 dried red chillies, deseeded
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander seeds
  • 15 black peppercorns
  • 3 cloves
  • 2 cm cinnamon stick
  • 2 tablespoon white poppy seeds or ground almonds
  • 6 fat garlic cloves, grated into a paste
  • 2 tablespoon ginger, peeled weight, grated into a paste
  • ½ teaspoon turmeric
  • Tamarind paste, to taste
  • Salt, to taste
  • Handful of chopped fresh coriander leaves
