SPICY BAKED FISH WITH LEMON

Preparation Method :
- Marinate the fish with half the chilli paste, salt and turmeric powder at least for half an hour.
- Place the marinated fish in an oiled baking tray and cover all the sides with the spiced onion mixture.
- Heat the oil in a pan and toss in the onions and stir till they are golden.
- Add the garlic and when it changes colour, drop in the remaining chilli paste and keep stirring for about a minute or two to prevent it from burning.
- Add in the tomatoes and adjust seasoning with salt, cook till the tomatoes are mushy. Add in half the coriander leaves and remove from the heat.
- Bake the fish in a preheated oven 180°C / 350°F / Gas mark 4 for about 7-10 minutes or until the fish is golden and done.
- Remove from the oven, drizzle with the lemon juice and coriander leaves and serve.

- 750 grams Pomfrets, cleaned, washed and incised
- 75 grams onions, chopped
- 75 grams Red chilli paste
- 75 grams tomatoes, chopped
- 1 teaspoon Turmeric powder
- 25 ml IDHAYAM Sesame Oil
- 1 tablespoon fresh garlic, chopped
- 1 tablespoon coriander leaves, chopped
- Salt to taste
- Juice of one lemon
