Preparation Method :
- Dust the fish fillet with corn flour.
- Deep fry till crisp and golden brown. Arrange on a plate.
- Sauce: In a pan, saute garlic, crushed red chillies, bird's eye chillies and makroot leaves.
- Add stock with all the ingredients, adjust seasoning and pour over the fish and serve hot.
INGREDIENTS
- 250 grams Fish fillets, cleaned, fillets
- 400 ml Cooking oil
- 3 tablespoons Cornflour
For the Sauce
- 1 tablespoon Garlic, chopped
- 6 Red chillies, chopped
- 1 teaspoon Sugar
- 6 Makroot leaves
- 3 sprigs Sweet basil
- 2 teaspoons Stock
Cornflour for thickening
- 1 tablespoon Nam pla
- 2 teaspoons Dark soy sauce
- 6 Birds eye chilies
- Salt and pepper to taste
