PEANUT CRUSTED KINGFISH

15 minutes

Preparation Method :

  • Marinate the fish with lime juice, chilli flakes, garlic, coriander and salt.
  • Add the gram flour to the excess marinade and apply a coating over the fish.
  • Coat the fish slices with crushed peanut.
  • Heat oil in a frying pan and shallow fry the fish slices till golden-brown and crisp on both sides. Drain on kitchen paper to remove excess of oil.
  • Serve hot, accompanied with wedges of lemon and onion slices.

INGREDIENTS

  • 2 Slices of king fish
  • 1 Onion, sliced
  • 1 Lime
  • 1 teaspoon Coriander, chopped
  • 1 teaspoon Gram flour
  • 1 teaspoon Chilli flakes
  • 1 teaspoon Garlic, chopped
  • Salt to taste
  • 50 grams Crushed peanut, pound to coating consistency
  • Cooking oil for shallow frying
