PEANUT CRUSTED KINGFISH

Preparation Method :
- Marinate the fish with lime juice, chilli flakes, garlic, coriander and salt.
- Add the gram flour to the excess marinade and apply a coating over the fish.
- Coat the fish slices with crushed peanut.
- Heat oil in a frying pan and shallow fry the fish slices till golden-brown and crisp on both sides. Drain on kitchen paper to remove excess of oil.
- Serve hot, accompanied with wedges of lemon and onion slices.
INGREDIENTS
- 2 Slices of king fish
- 1 Onion, sliced
- 1 Lime
- 1 teaspoon Coriander, chopped
- 1 teaspoon Gram flour
- 1 teaspoon Chilli flakes
- 1 teaspoon Garlic, chopped
- Salt to taste
- 50 grams Crushed peanut, pound to coating consistency
- Cooking oil for shallow frying
