MACKEREL CURRY WITH BLACK GRAM & FENUGREEK

Preparation Method :
- Cut one onions into slices and finely chop the other 3 onions.
- Heat 1 teaspoon oil in a pan. Stir-fry rice till it becomes dark brown and remove from oil.
- Add black gram to the oil and stir-fry till browned. Remove the black gram.
- Add in the fenugreek and black peppercorns to the same oil. When splatters remove from heat.
- Stir-fry the sliced onions with oil in a clean pan till golden brown. Add grated coconut and stir-fry till brown.
- Grind the stir fried rice and black gram together to coarsely powder.
- Stir fry the grated coconut in a pan. Now grind stir-fried coconut, tamarind, chillies and turmeric to a rough paste and keep aside.
- Grind fenugreek and peppercorns to a fine paste.
- Stir fry the chopped onions in the remaining oil until onion becomes soft.
- Add ground coconut mixture with 5 cups water and salt. Add mackerels.
- Then mix ground rice and black gram dal with the curry. Add the fenugreek and peppercorn paste. Stir and cook for about 3 - 5 minutes.

- 2 tablespoons Black gram
- 6 Large Mackerels, Cleaned, rinsed, marinate with salt and wash after 10 - 15 minutes.
- 275 grams grated Coconut
- 9 Red chillies
- 2 teaspoons Turmeric powder
- 45 - 50 Peppercorns
- 250 grams Onions
- 50 ml Cooking oil
- 1 tablespoon tamarind
- ½ teaspoon Fenugreek
- Salt to taste
