GRILLED PEPPER SPIKED FISH

Preparation Method :
- Heat the butter in a pan and drop in the cumin seeds. When they crackle, add the garlic and cook till soft.
- Whisk together the garlic with the oil, pepper, turmeric, chillies and salt, marinate the fish well with this mixture. Leave to rest for an hour.
- Slide the fish in a hot non-stick pan and cook on both sides until done. Serve hot.
INGREDIENTS
- 1 kg Red snapper steaks
- 50 ml IDHAYAM Sesame Oil
- 2 tablespoon Butter
- ½ teaspoon Cumin seeds
- 25 grams garlic pods, peeled
- 1 tablespoon Crushed black peppercorns
- ½ teaspoon Turmeric powder
- 1 tablespoon Chopped fresh chillies
- Salt to taste
Spicy Paste: Ground to smooth paste
- 50 grams Cashew nuts
- 50 grams Yogurt
- 45 grams Coriander leaves
- 25 grams Peeled shallots
- 45 grams Mint leaves
- 30 grams Fresh chillies
- 25 grams Peeled garlic
- Salt to taste
