GRILLED FISH WITH PIMENTO COULIS

Preparation Method :
- Marinate the fish in this puree add some salt, crushed pepper corns and lime juice.
- For Coulis : Heat the butter in a pan, when hot add the chopped bell pepper and saute it with salt to taste and a pinch of sugar.
- Cook it in a gentle flame. Keep aside to cool. Make a fine puree of this mixture.
- Take the marinated fish and lightly pound it in rough channa dhal powder.
- In a griller apply olive oil. Grill the fish until it is cooked.
- Place the fish on a plate and serve it with the bell pepper mousse.
INGREDIENTS
- 450 grams Fish filet, cleaned, washed and cut into triangle
- 2 Limes
- 10 grams Crushed pepper corns
- 1 tablespoon Olive oil
- 2 tablespoon Butter
- 100 grams Channa dal, Roasted and roughly ground
- 150 grams Fresh herbs Oregano / celery / sage / mint, puree
- 100 grams Red bell pepper, chopped
- 1 teaspoon Sugar
- Salt to taste
