GRILLED FISH WITH PIMENTO COULIS

Preparation Method :

  • Marinate the fish in this puree add some salt, crushed pepper corns and lime juice.
  • For Coulis : Heat the butter in a pan, when hot add the chopped bell pepper and saute it with salt to taste and a pinch of sugar.
  • Cook it in a gentle flame. Keep aside to cool. Make a fine puree of this mixture.
  • Take the marinated fish and lightly pound it in rough channa dhal powder.
  • In a griller apply olive oil. Grill the fish until it is cooked.
  • Place the fish on a plate and serve it with the bell pepper mousse.

INGREDIENTS

  • 450 grams Fish filet, cleaned, washed and cut into triangle
  • 2 Limes
  • 10 grams Crushed pepper corns
  • 1 tablespoon Olive oil
  • 2 tablespoon Butter
  • 100 grams Channa dal, Roasted and roughly ground
  • 150 grams Fresh herbs Oregano / celery / sage / mint, puree
  • 100 grams Red bell pepper, chopped
  • 1 teaspoon Sugar
  • Salt to taste
