FISH CURRY

Preparation Method :

  • Heat the oil in a heavy-bottomed pan and sauté the onions till they turn soft.
  • Add the garlic and when it changes colour, add the fish, tomato puree and turmeric powder; reduce the heat and add half of the coconut milk with the spicy paste.
  • Simmer to low flame for about 3-5 minutes and then add the remaining thick coconut milk and the tamarind juice.
  • Bring the sauce to a boil and then reduce the heat and cook till the sauce coat the fish. Taste and adjust the seasonings and serve hot.

INGREDIENTS

  • 500 grams fish, cleaned, marinated with salt, turmeric and garlic  
  • 75 grams Chopped onions
  • 50 ml Tamarind juice
  • 1½ teaspoon turmeric powder
  • 25 grams garlic, chopped
  • 25 grams fresh chillies, chopped
  • 25 ml IDHAYAM Sesame Oil
  • Salt to taste
  • 250 ml Tomato Puree
  • 250 ml fresh coconut milk

Ground to a Paste

  • 2 tablespoon Coriander seeds
  • 1 tablespoon Cumin seeds
  • 9 Dried red chillies
  • 2 teaspoon Peppercorns
