FISH COOKED IN YOGHURT

Preparation Method :

  • In a large saucepan, heat the oil and add fenugreek seeds, chopped green chilli, cinnamon and cardamom. Add the cloves and then the onions and fry till light brown.
  • Mix all spice powders, the ginger and garlic with half cup water to make a mixture.
  • Stir into the pan and cook on a low heat until most of the moisture has dried up. Then sauté the mixture for a minute or two, stirring continuously.
  • Add water and cook for about 10 - 15 minutes. Simmer to low flame and add the whipped yoghurt and stir continuously.
  • Add the sugar, tomatoes and up to one cup water, depending on the gravy required and adjust salt seasoning. Stir well.
  • Put the fish in gently and cook, uncovered for about 2 minutes, before turning the pieces over.
  • Add sultanas and cook, uncovered at least for 5 minutes or until the fish is done.

INGREDIENTS

  • 500 grams Fish, Skin and washed, Marinate with ½ teaspoon salt and lemon juice. Leave for half hour.
  • 2 Onions, sliced
  • ½ teaspoon Fenugreek seeds
  • 1 Green chili, chopped
  • 2" Cinnamon stick
  • 6 Green cardamon
  • 4 Cloves
  • 150 ml yogurt, whipped
  • ½ teaspoon Turmeric powder
  • 2 teaspoons Mustard powder
  • 2 teaspoons Coriander powder
  • 1 teaspoon Cumin powder
  • 1 teaspoon Red chilli powder
  • ½ teaspoon Sugar
  • 2 teaspoons Ginger, chopped
  • 2 teaspoons Garlic, chopped
  • 2 Tomatoes, chopped
  • 3 tablespoons Sultanas
  • 75 ml Cooking oil
  • 2 tablespoons Lemon juice
  • Salt to taste
  • Water
