BASA FISH IN HOT BEAN SAUCE

Preparation Method :

  • Fill the fillets with pakchoy leaves and slices of shitake mushrooms to enhance the flavour.
  • Steam for about 10 minutes. Keep it aside.
  • Heat oil in a pan, chopped ginger, garlic, chilli, spring onion and stir for a while.
  • Add spicy black bean and stock as required with some dark soya dark and season well. Thicken with corn flour.
  • Pour on top of fish fillet and serve hot.

INGREDIENTS

  • 220 grams Basa fish fillet, sliced
  • 50 grams Pakchoy
  • 50 ml Spicy black bean sauce
  • 1 tablespoon Garlic clove, Finely chopped
  • 1 tablespoon Spring onion leaves, Finely chopped
  • 2 teaspoon Green chillies, Finely chopped
  • 1 teaspoon Soya (dark)
  • 1 teaspoon Sesame oil
  • 25 grams Corn flour
  • 2 teaspoon Sugar
  • 45 grams Shitake mushroom, sliced
  • 1 tablespoon Ginger root, Finely chopped
  • 2 teaspoon Cooking oil
  • 150 ml Stock
