Preparation Method :
- Put the bacalhau with water in a pan, simmer to low flame for about 10 - 15 minutes. Drain and cool. Flake the fish, discard the skin and bones.
- Saute the onion rings with 2 teaspoons of olive oil for about a minute or until translucent.
- Preheat the oven to 200°C / 400°F.
- In a well oiled dish, layer potatoes, onions and fish, sprinkle each layer with olives, parsley, salt, pepper and olive oil.
- Finish with a layer of onion rings and sprinkle olive oil on top. Bake for about 30 minutes till slightly brown.
INGREDIENTS
- 500 grams Potatoes, (boiled, peeled, cut finely into roundels)
- 500 grams Bacalhau (salted cod fish), soaked for a day, changing the water at least 4 times
- 2 Onion, slice roundels
- 15 Black olives
- 2 Eggs, Hard boiled
- ½ bunch Parsley, finely chopped
- 50 ml Cooking oil
- 2 Lime
- Salt and pepper to taste
