BACALHAU A GOMES DE SA

Preparation Method :

  • Put the bacalhau with water in a pan, simmer to low flame for about 10 - 15 minutes. Drain and cool. Flake the fish, discard the skin and bones.
  • Saute the onion rings with 2 teaspoons of olive oil for about a minute or until translucent.
  • Preheat the oven to 200°C / 400°F.
  • In a well oiled dish, layer potatoes, onions and fish, sprinkle each layer with olives, parsley, salt, pepper and olive oil.
  • Finish with a layer of onion rings and sprinkle olive oil on top. Bake for about 30 minutes till slightly brown.

INGREDIENTS

  • 500 grams Potatoes, (boiled, peeled, cut finely into roundels)
  • 500 grams Bacalhau (salted cod fish), soaked for a day, changing the water at least 4 times   
  • 2 Onion, slice roundels        
  • 15 Black olives    
  • 2 Eggs, Hard boiled    
  • ½ bunch Parsley, finely chopped
  • 50 ml Cooking oil
  • 2 Lime        
  • Salt and pepper to taste
