EGG VINDALOO

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Heat the oil and fry onions to light golden colour.
  • Add ground paste and fry till the raw smell disappears. Stir in the jaggery syrup with little water.
  • Bring to a boil and put in the eggs. Cook till the gravy turns thick.
  • Decorate with coriander leaves. Serve hot.

INGREDIENTS

  • 9 hard boiled eggs, shelled, fried in Cooking oil
  • 90 ml Cooking oil
  • 1 onion, sliced
  • 1 teaspoon garam masala
  • Salt to taste
  • Handful of sliced coriander leaves

Ground to Paste

  • 4-5 flakes garlic
  • ½ inch piece ginger
  • 1 teaspoon cumin seeds
  • Jaggery Syrup- mixed together and strained
  • 90 ml vinegar
  • 1 tablespoon grated jaggery
