CRAB SIMMERED IN SPICED COCONUT MILK

Preparation Method :

  • Place the mixture in a muslin cloth and squeeze out the milk till it is dry and then reserve the milk and discard the paste.
  • Heat the oil in a thick-bottomed pot and fry the onions for 2-3 minutes or until they are soft.
  • Add the fresh chillies, ginger and garlic and continue to stir till they start to change colour. Add the crab and stir them till they are pink.
  • Add the coconut extract with vinegar, simmer to low flame for 10-12 minutes or until the crabs are cooked through.
  • Bring the sauce to a rapid boil for 20 seconds and taste and adjust the seasonings. Cook till the gravy is thickened, remove from the heat and serve.

INGREDIENTS

  • 2.5 kg Crabs, cleaned, washed, shell and entrails discarded, crack the claws and cut the body into halves
  • 150 grams Chopped onions
  • 50 ml Cooking Oil
  • 20 grams Chopped fresh chillies
  • 2 tablespoon Chopped ginger
  • 2 tablespoon Chopped garlic
  • 2 tablespoon Vinegar
  • Salt to taste

Ground to coarse Paste

  • 420 grams Fresh grated coconut
  • 25 grams Peeled garlic cloves
  • 1 teaspoon Turmeric powder
  • 1 teaspoon Cumin seeds
  • 2 teaspoon Black peppercorns
  • 2 tablespoon Dried red chillies
