STEWED CHICKEN IN A SPICY SAUCE

Preparation Method :

  • Heat the oil in a heavy-bottomed pan and fry the spice paste on medium heat for ten minutes stirring all occasionally.
  • When the mixture thickens and the oil separates from the sides, add the chicken and a bit of salt and stir for a minute or two.
  • Add the tamarind juice with little water and cook for 15-20 minutes or until the chicken is tender and cooked through.
  • Taste and adjust the seasonings and bring the sauce to a boil and stir in the nutmeg.
  • The thickness of the sauce could be adjusted by adding water. Traditional Xacuti should have a very thick sauce.

INGREDIENTS

  • 6-8 pieces, chicken, cleaned, washed, peeled
  • 1 teaspoon Turmeric powder
  • 75 ml Cooking oil
  • 50 ml Tamarind juice
  • ¼ teaspoon Grated nutmeg
  • Salt to taste

Spice Paste, (Dry Roasted)

  • 220 grams Grated coconut
  • 150 grams onions, sliced
  • 1 tablespoon Coriander seeds
  • 1 teaspoon Cumin seeds
  • 2 teaspoon Poppy seeds
  • 25 grams Dried red chillies
  • 10 grams Star anise
  • 2 teaspoon Black peppercorns
  • 1 teaspoon Fennel seeds
