KONKON STYLE SPICY DRY CHICKEN

Preparation Method :

  • In a heavy-bottomed pan, heat the oil, add the chopped onions and cook till they are golden brown, add in the tomatoes and cook till they are pulpy.
  • Add in the ground spice paste, stir it for about 3-5 minutes, add in the chicken and a bit of salt, simmer for about 5-7 minutes.
  • Stir the chicken to prevent it from sticking, add in the tamarind juice and continue cooking for about 15-20 minutes or until the chicken is done.
  • Adjust the seasonings and stir in the coconut. When most of the moisture is absorbed, remove from the heat. Serve hot.

INGREDIENTS

  • 1.5 kg Full chicken without skin, cleaned, cut into pieces, marinate with salt and turmeric
  • 220 grams tomatoes, chopped
  • 475 grams freshly grated coconut
  • 1½ teaspoon Turmeric powder
  • 150 grams onions, chopped
  • 75 ml tamarind juice
  • 50 ml IDHAYAM Sesame Oil
  • Salt to taste

Roasted and Ground to Paste

  • 1 tablespoon Black peppercorns
  • 1 tablespoon Cinnamon
  • 2 teaspoon Cloves
  • 2 tablespoon Coriander seeds
  • 150 grams onions, sliced
  • 1 tablespoon Cumin seeds
  • 25 grams Dry red chillies
  • 1 tablespoon garlic pods, sliced
