GUISADO DE GALINHA

Preparation Method :

  • Mix the flour with 2 tablespoons of water and set aside.
  • Marinate chicken in a mixture of salt, turmeric powder, ginger-garlic paste and lime juice for about 20 - 25 minutes.
  • Heat oil in a pan; add onion, tomato and capsicum rings and stir Fry gently.
  • Add the chicken to the pan and saute for about 2- 3 minutes. Add the stock or water and cook for about 20 - 22 minutes till the chicken is tender.
  • Add the coconut milk, flour paste, cumin, coriander and pepper powder with onion, tomatoes and capsicum rings and cook over low heat for 2 minutes.

INGREDIENTS

  • 400 ml Chicken stock or water
  • 500 grams Boneless chicken, Chop into small pieces  
  • 1 teaspoon Turmeric powder
  • 1 large Onion, thick rings        
  • 1½ teaspoons Ginger-garlic paste
  • 1 Lime    
  • 1 large Tomato, thick rings
  • ½ teaspoon Coriander powder
  • 75 grams Capsicum, thick rings
  • 1 teaspoon Refined flour    
  • 9 Cloves    
  • 3 inch stick Cinnamon
  • ½ teaspoon Cumin powder
  • 4 Green chillies, slited    
  • 75 ml Cooking oil   
  • 350 ml Coconut milk        
  • ½ teaspoon Pepper powder
  • Salt to taste
