GOAN CHICKEN CURRY

Preparation Method :

  • Heat 1 tablespoon of the oil in a wok or large pan and fry the cumin seeds, peppercorns, fennel and coriander seeds over a low heat until they begin to splutter.
  • Add the finely chopped onions and fry for about 2-3 minutes or until the onion has softened, stirring occasionally.
  • Stir in the coconut, along with the soaked water and salt, continue to fry for a further 2-3 minutes, stirring to prevent the mixture from sticking to the pan.
  • Put the coconut mixture into a food processor and process to form a coarse paste. Spoon into a bowl and set aside until required.
  • Heat the remaining oil and fry the chicken for 10 more minutes and add in the coconut paste and cook for about 20 minutes or until the mixture turns golden brown and the chicken is tender.
  • Transfer the curry to a warmed serving dish and garnish with sprigs of fresh coriander and lemon wedges.

INGREDIENTS

  • 9 small chicken pieces, skinned
  • 2 onions, finely chopped
  • 25 ml IDHAYAM sesame oil 
  • 100 grams desiccated coconut, soaked
  • ¾ teaspoon cumin seeds 
  • 6 black peppercorns 
  • 2 tablespoon fennel seeds 
  • 2 tablespoon coriander seeds 
  • Salt, to taste
  • Fresh coriander sprigs and lemon wedges, to garnish
