GALINHA A PORTUGUESA

Preparation Method :

  • Pre-heat oven to 180°C / 350°F.
  • Season the chicken cubes with salt and pepper and dust each piece with refined flour.
  • Heat half of olive oil, sear the chicken cubes both sides and transfer it to a baking dish.
  • Heat the remaining olive oil and sauté garlic, onion, red, green and yellow peppers until tender. Add tomato, tomato puree, simmer for about 3 - 5 minutes.
  • Transfer the mixture to the same baking dish with chicken. Pour white wine, lime juice, sprinkle salt, crushed pepper and paprika powder. Mix it thoroughly. Layer the Grated cheese on top.
  • Bake for about 10 minutes until the cheese is melted. Sprinkle chopped parsley on top and serve hot.

INGREDIENTS

  • 1 kg Boneless chicken breasts, cut into small cubes
  • 40 ml Cooking oil
  • 2 tablespoon Garlic, Finely chopped
  • 50 grams Onion, Finely chopped
  • 45 grams Refined flour
  • 50 grams Yellow pepper, diced
  • 1 Tomato, De-seeded and cut into cubes.  
  • 75 grams Tomato puree
  • 1 Green pepper, diced
  • 2 teaspoons Parsley, finely chopped
  • 75 grams Crushed pepper
  • 1 tablespoon Paprika powder
  • 50 grams grated Cheese
  • Pepper powder and Salt to taste
  • 50 ml White wine
  • 1 Lime
  • Salt to taste
