CUMIN SCENTED CHICKEN FRITTERS

Preparation Method :

  • Marinate the chicken pieces with the marinade and a pinch of salt and keep it in a cool place for half an hour.
  • Whisk the flour with turmeric and enough water to make a thick batter of coating consistency. Adjust seasoning with salt.
  • Add the roasted cumin and coriander leaves to the batter and whisk it again.
  • Heat the oil and dip the chicken pieces in the batter and then slide them into the hot oil.
  • Stir gently till the chunks appear evenly golden and cooked through, remove from the oil.
  • Transfer the fried chicken to kitchen paper towels and drain off, serve hot. 
  • Marinade : Roast the cumin seeds in a hot, dry pan until they change colour. Pound them coarsely and keep aside.
  • Add the oil, garlic, peppercorns and chilli flakes and crush the mix coarsely.

INGREDIENTS

  • 1.5 kg chicken, peeled, washed and cut into medium sized chunks
  • 125 grams Besan
  • 1 tablespoon Cumin seeds
  • 1½ teaspoon Turmeric powder
  • 1 tablespoon Cooking oil
  • 25 grams Peeled garlic
  • 1 tablespoon Black peppercorns
  • 2 tablespoon Red chilli flakes
  • Salt to taste
  • 2 tablespoon Chopped coriander leaves  
  • Cooking oil to deep fry
