CHICKEN WITH COCONUT AND SPICES

Preparation Method :

  • Heat the oil and add the cumin and mustard seeds. When they splutter, add the onions and cook them till they are golden.
  • Add the garlic and when the colour changes, add the chicken, ginger, fresh chillies, turmeric powder, black pepper and salt. Stir well on medium heat till all the spices are mixed well.
  • Add the coconut and continue to stir for 3-5 minutes. Pour in half a cup of water and cook for further 5-7 minutes, stirring occasionally.
  • When the chicken is cooked through and tender, taste and adjust the seasonings. Stir in the coriander leaves, remove from the heat and serve hot.

INGREDIENTS

  • 1.5 kg Chicken, skin removed, cleaned, washed and dried
  • 120 grams Fresh coconut, grated
  • 120 grams onions, chopped
  • 2 tablespoon garlic, chopped
  • 50 ml Cooking oil
  • 2 tablespoon ginger, chopped
  • 2 tablespoon fresh chillies, chopped
  • 1 tablespoon black peppercorns, crushed
  • 1½ teaspoon Turmeric powder
  • ½ teaspoon Cumin seeds
  • ¼ teaspoon Mustard seeds
  • Salt to taste
  • 1 tablespoon fresh coriander leaves, chopped
