CHICKEN WITH CASHEW NUTS AND COCONUT MILK

Preparation Method :

  • Heat the oil in a heavy-bottomed pan and add the cumin and coriander seeds. When they crackle, add the chicken with fresh chillies, turmeric powder and salt.
  • Stir in the spiced coconut milk, cook for about 5-7 minutes; add the remaining coconut milk and some salt.
  • Cook for a further 15-20 minutes or until the chicken has cooked through and the sauce coats it.
  • Stir in the coriander leaves and mix, remove from the heat and taste and adjust the seasonings. Serve hot.

INGREDIENTS

  • 1 kg Chicken, chopped into large pieces
  • 200 ml Coconut milk
  • 2 tablespoon Coconut oil
  • ½ teaspoon Cumin seeds
  • 1 teaspoon Coriander seeds
  • 2-4 Chopped fresh chillies
  • 1 teaspoon Turmeric powder
  • Salt to taste
  • 1 tablespoon Chopped coriander leaves
  • Spicy Milk, (Soaked and ground)
  • 6-9 Dried red chillies  
  • 3 tablespoon Peeled ginger
  • 200 ml Coconut milk
  • 50 grams Cashew nuts
  • 10-12 pods Peeled garlic
