GARBONZO BEAN FLOUR AND TOMATO PANCAKES

Preparation Method :

  • Roast the cumin seeds in a dry pan till they change colour and grind them to coarse powder.
  • Mix the turmeric and flour with enough water to make a thick batter of coating consistency.
  • Mix the onions, tomatoes, ginger, chillies, coriander seeds, roasted cumin in a large mixing bowl and adjust seasoning with salt.
  • Heat a non-stick pan and drizzle some oil on it; spoon a ladle of the batter in the centre.
  • Sprinkle the onion-tomato mixture on top and cook for a minute or two on medium heat.
  • Flip over the pancake and continue to cook till both sides are done and evenly golden. Serve hot.

INGREDIENTS

  • 220 grams garbanzo bean flour
  • 60 grams chopped onions
  • 60 grams chopped tomatoes
  • 1 tablespoon chopped ginger
  • 2 tablespoon chopped fresh chillies
  • 1 tablespoon chopped coriander leaves
  • ½ teaspoon turmeric powder
  • 1 teaspoon cumin seeds
  • Salt to taste
  • 2 tablespoon Cooking oil
