APA DE CAMARAO

Preparation Method :

  • Grind the soaked rice with chopped coconut and coconut toddy.
  • Add the egg yolks, whole wheat flour, sugar and butter. Mix well. Divide into two equal parts.
  • Filling: Grind all the ingredients for the filling.
  • Now chop the onion. Heat a little oil and saute onions till golden brown.
  • Add in the ground mixture, sugar and the tamarind juice. Stir and then add in the shrimps, keep stirring till the juices evaporate. Cool the mixture.
  • Now smear a baking dish with butter. Spread along the three sides one portion of the crust mixture.
  • Place the filling in it. Spread on top of the filling, the other half of the crust mixture. Leave it for half an hour to ferment in a cool place.
  • Place it in a moderate oven and bake till crust is done.

INGREDIENTS

For the Filling

  • 500 grams Shrimps
  •  ¼ shredded Coconut
  • 6 Garlic cloves
  • ½ teaspoon Cumin seeds
  • 45 grams Tamarind
  • 1 teaspoon Coriander seeds
  • 1 teaspoon Asafetida
  • 45 grams Sugar
  • 50 grams Onion
  • 9 Red chilies
  • ¼ inch Whole turmeric
  • 1 inch Ginger piece
  • 6 Cloves
  • 4 Black pepper corns
  • 2 Cardamom

For the Crust

  • 4 Egg yolks
  • 2 tablespoons Butter
  • 90 grams Atta, husk preferable
  • 225 grams Unpolished rice, soaked overnight
  • ½ Coconut
  • 150 ml Coconut toddy
  • 100 grams Sugar
  • Salt to taste
