SWEET PONGAL

Preparation Method :

  • Dry roast rice and dal for 4-5 minutes on medium heat in a kadhai.
  • Remove from kadhai and wash. Put in a pressure cooker. Add the milk and water. Pressure cook to allow 3 whistles. Reduce heat and keep on low heat for 1-2 minutes. Remove from heat. Let the pressure drop by itself.
  • Place the jaggery with in a kadhai and cook for 5-7 minutes to get a nice golden coloured syrup.
  • Open the cooker. Strain the jaggery syrup and add the, jaggery syrup to the rice-dal. Mix and stir on low heat for about 5 minutes. Remove from heat.
  • Heat ghee in a clean vessel and add the chopped nuts. Fry them on medium heat till they change colour. Add to the cooked pongal. Add crushed cardamoms and mix.

 

INGREDIENTS

  • 300 grams rice
  • 4 tablespoon yellow moong dal
  • 300 ml milk
  • 300 grams grated jaggery
  • 100 grams chopped mixed dry fruits (cashew nuts, almonds, raisins)
  • 50 grams chopped fresh coconut
  • Seeds of 6 green cardamoms- crushed
  • 5 tablespoon ghee
