Preparation Method :

  • Place the coconut and Jaggery together over a slow flame and cook well till dry.
  • Boil the water, salt and ghee.
  • Stir in the rice flour over low flame and mix well to a stiff paste Remove from flame and knead to form a soft dough.
  • Form into small lime sized balls.
  • Place a ball on the center of a banana leaf, cover with another leaf and press thin.
  • Carefully peel off the upper leaf, spoon a tablespoon of coconut mixture on the surface and spread evenly leaving the outer edges clean.
  • Fold the leaf to seal the edges.
  • Trim the excess leaf edges to obtain a neat semi circle. Repeat till the dough is finished. Steam for twenty minutes.
  • Take care to allow space for steam to pass between the breads when arranging them in the cooker.

INGREDIENTS

  • 300 grams Rice flour
  • 2 tablespoon Ghee
  • 300 grams Grated coconut
  • 100 grams Jaggery
  • Salt to taste
  • Banana leaves
