COCONUT RICE

Preparation Method :

  • Heat oil in a saucepan and when hot, add mustard and cumin seeds, curry leaves, and finely chopped chillies.
  • Drain rice. Add to the pan and stir-fry for 2 minutes.
  • Add the coconut milk and boiling water, season with salt and pepper and bring back to boil.
  • Cover tightly. Reduce the heat to a simmer. Do not lift the lid, as steam is required for the cooking process. Cook till rice is soft to the bite.
  • Remove the pan from the heat and leave uncovered for 10 minutes.
  • To serve fluff up the grain of rice with a spoon and garnish with roasted cashew nuts.

INGREDIENTS

  • 500 grams basmati rice, washed and soaked in cold water for 15 minutes
  • 4 tablespoon sesame oil
  • 4 teaspoon mustard seeds
  • 2 teaspoon cumin seed
  • A sprig of curry leaves
  • 2 dried red chilly finely chopped
  • 100 ml coconut milk
  • 100 ml boiling water
  • Salt and pepper
  • Roasted cashew nuts for garnish
