THANDAI

Preparation Time :

Preparation Method :

  • Boil the water in a pan.
  • Add the fennel seeds,cardamom and cloves.Cover the pan with a lid and put off the flame.
  • Allow it to set for 10 minutes.
  • In a separate bowl, take the raisins, almonds, pistachios , melon seeds and  sunflower seeds and add the fennel extract to it. Cover and  allow it to stand for an hour.
  • Now , blend the mixture in a blender to a smoothie.
  • Place a strainer over a bowl and pour the smoothie onto it.
  • The liquid portion of the smoothie will first drain out.The remaining smoothie has to be squeezed tightly and the maximum liquid will be extracted.
  • Soak the saffron in two tablespoons of hot milk.
  • Combine the blended nuts extract, saffron milk, sugar and the remaining milk in a jar and refrigerate.
  • Fill quater of a glass with crushed ice and pour the Thandai onto it and serve.

INGREDIENTS

  • 250 ml water   
  • 1 tablespoons fennel seeds
  • 4 cardamom pods
  • 2 whole cloves
  • 50 grams raisin
  • 50 grams almonds, blanched and grated
  • 25 grams Pista
  • 25 grams melon seeds
  • 25 grams sunflower seeds
  • 500 ml Milk
  • 50 grams sugar
  • 5 strands  saffron
