MILK BURFI

Preparation Method :

  • Bring the milk to boil and immediately add the lemon juice and stir it well. After the milk has completely curdled, turn off the heat.
  • Filter it using muslin cloth. Rinse it 2 -3 times to remove any remant of lemon flavour.
  • Allow to stand for 3 hours to remove the excess water.
  • Mash the above prepared paneer/cottage cheese along with milk powder and sugar.
  • Heat ghee in a pan and add the paneer mixture. Heat it at low flame until ghee separates. Add the cardamom powder. Mix it well.
  • Cool it and knead it gently for a smooth texture. Spread it on a greased tray and flatten it evenly with a spoon.
  • Cut in diagonal/square shape. Garnish with pistachios and serve.

INGREDIENTS

  • 1 litre milk
  • 5 tablespoons sugar
  • 2 tablespoons lime juice
  • 1 teaspoon cardamom powder
  • 2 tablespoons milk powder
  • 25 pistachios
