Preparation Method :
- Grind the soaked urad dal (after draining water) in a blender with ginger, fennel seed, green chillies and salt until smooth.
- Heat oil in a frying pan.
- Take 2 tablespoons of the batter on wet palm or on plastic sheet and shape it into a circle and drop it gently in the heated oil or drop a tablespoon of batter directly into the oil.
- Fry it until golden brown. Place it on an absorbent paper.
- Make the vadas with remaining batter in the same manner. Soak all the vadas in warm water for 10 - 15 minutes. Squeeze it to remove excess water and place in a bowl.
- Make tamarind chutney by boiling water and jaggery. Add the tamarind pulp after the jaggery get dissolved.
- Add the remaining ingredients. Simmer for 5 minutes until the mixture thickens and turn off the gas. Cool it.
- Gently beat the curd until frothy.
- To assemble dahi vada, place the squeezed vadas in the serving plate. Top it with curd. Drizzle the tamarind chuntney. Season it with salt, chilli powder, chaat masala and cumin powder.
- Garnish with coriander leaves and boondi.
- Serve it immediately.

- 220 grams urad dal / skin removed split black lentils (soaked for 3 hours)
- 1 small piece of ginger
- 1 green chillies (chopped)
- 1 teaspoon fennel seeds
- 1 teaspoon chilli powder
- 2 teaspoon roasted cumin powder
- 1 teaspoon chaat masala
- Salt to taste
- Cooking oil for deep-frying
- Warm water for soaking vadas
- Coriander leaves for garnishing
- Boondi for garnishing
Tamarind chutney
- 100 ml tamarind pulp
- 150 grams jaggery
- 500 ml water
- 2 teaspoon roasted cumin seeds powder
- 1 teaspoon chilli powder
- 1 teaspoon black salt
- Salt as per taste
