SWEET CORN BALLS

Preparation Method :

  • Blend the sweet corn in a mixer to a coarse paste.
  • Transfer it to a bowl, add the red curry paste, spring onion greens, soya sauce, sweet corn paste, rice flour and salt in a bowl and mix well.
  • Divide the mixture into 12 equal portions and shape each portion into a round ball.
  • Heat the oil in a pan on a medium flame, and deep-fry the balls till they are golden brown in colour from all sides. 
  • Drain on an absorbent paper and serve hot.

INGREDIENTS

  • 500 grams sweet corn kernels 
  • 100 grams spring onion greens, finely chopped
  • 1 ½ tablespoon sauce
  • 6 tablespoon rice flour 
  • Salt to taste
  • IDHAYAM Mantra Peanut Oil for deep-frying

Red curry paste

  • 1 red chilli, soaked in warm water for 10 minutes and drained 
  • 200 grams chopped onions 
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon chopped lemon grass 
  • 1 teaspoon chopped coriander
  • ¼ teaspoon coriander powder 
  • ¼ teaspoon cumin seeds powder 
  • Salt to taste
  • A pinch of pepper powder
