RICE BALLS

Preparation Method :

  • Mix the cooked rice, leek, sprouts, cloves, ginger, tamari, Pepper with slightly wet hands, form the mixture into about 12 balls, pressing them together firmly. If you still have difficulty making the rice stick, put the mixture in a food processor and blend for 20 seconds.
  • Roll each ball in the sesame seeds, then in the flour.
  • Pour about 10 cm / 4 inches of oil into a wok or deep pan. Heat to 180°C/350°F or until a cube of bread browns in 30 seconds, then fry the rice balls, a few at a time, for 5 minutes until brown and crisp.
  • Drain on paper towels and serve warm or at room temperature with Spicy Ginger and Sesame Sauce, Carrot and Coriander Relish, and Tangy Peanut Sauce. 

INGREDIENTS

  • 750 grams cooked rice
  • 100 grams leek, shredded and chopped very finely
  • 100 grams alfalfa sprouts
  • 5 garlic cloves, crushed
  • 1 inch piece fresh ginger root, chopped very finely
  • 6 tablespoon tamari
  • Pepper to taste
  • 6 tablespoon sesame seeds
  • 6 tablespoon plain flour
  • Groundnut oil, for deep frying
