CRISP CORN FRITTERS

Preparation Method :

  • Process eggs with prawns, garam masala and chili until smooth.
  • Stir egg mixture, sifted flour and baking powder with onion, celery, garlic, corn and capsicum in large bowl.
  • Spoon the mixture into oil; spread into flat rounds, shallow-fry until golden brown. Remove fritters from oil and drain. Serve with sauce.
  • Sauce Stir flour in small saucepan over low heat until lightly browned. Stir in sugar; cook over low heat until sugar begins to melt.
  • Gradually stir in the water; stir until mixture boils and thickens to sauce consistency.

INGREDIENTS

  • 75 grams stick celery, finely chopped 
  • 150 grams king prawns, shelled
  • 1 clove garlic, crushed
  • 4 green onions, chopped
  • 150 grams can corn kernels, drained
  • 1 medium green capsicum, chopped finely
  • 2 eggs
  • ½ teaspoon garam masala 
  • 2 small fresh red chillies, chopped 
  • 2 tablespoons plain flour
  • 2 teaspoons baking powder 
  • Peanut oil for shallow-frying
  • Salt, to taste

The Sauce

  • 150 ml water 
  • 1 tablespoon plain flour
  • 1 tablespoon brown sugar 
  • 1 tablespoons dark soy sauce
