ASH GOURD HALWA

Preparation Method :

  • Peel and cut the ash gourd into pieces. Remove the upper soft part and deseed them. Grate ash gourd pieces using a grater.
  • Cut cashews and almonds into small pieces. Keep it aside.
  • In a frying pan add little ghee and fry all dry fruits like cashews, raisins and almond. Keep it aside.
  • In a heavy bottom kadai, add the grated ash gourd and cook it over low heat until all the water evaporates and ash gourd becomes dry. Keep stirring regularly otherwise it will get burnt.
  • Once the ash gourd is dry, add sugar, food colour and saute.
  • Cook the mixture till it is dry and forms a lump.
  • Add the ghee and cook until halwa leaves the sides.
  • Add all the fried dry fruits, cardamom powder to the halwa and mix well.

INGREDIENTS

  • 600 grams Grated Ash gourd
  • 300 grams Sugar
  • 100 grams Ghee
  • 25 Raisins
  • 25 Cashews
  • 15 Almonds
  • 1 tablespoon Cardamom powder
  • Pinch of yellow food colour
