INDIAN-STYLE SPICED CHICKEN

Preparation Method :

  • Remove skin from chicken. Heat oil in pan, add chicken in batches, cook until well browned all over. Remove chicken from pan; drain on absorbent paper.
  • Drain all but 1 tablespoon of juices from pan, add onions, chilies, cinnamon, cumin seeds, ginger and garlic to pan, cook, stirring, until onions are soft.
  • Return chicken to pan. Add potatoes, water and tomatoes, simmer, covered about 15 minutes or until chicken and potatoes are tender.

 

INGREDIENTS

  • 1.5kg chicken thigh cutlets
  • 1 tablespoon IDHAYAM MANTRA peanut oil
  • 300 grams onions, chopped
  • 2 small fresh red chilies, chopped
  • 1 teaspoon ground cinnamon
  • 2 teaspoons cumin seeds
  • 1 tablespoon grated fresh ginger
  • 2 cloves garlic, crushed
  • 500 grams old potatoes, peeled, chopped
  • 150 ml water
  • 300 grams tomatoes, peeled, seeded, chopped
