LENTILS WITH PARSLEY BUTTER

Preparation Method :
- Heat the oil in a large heavy pan and fry the garlic and onion over a medium heat until golden. Stir in the lentils, continuing to stir until they have absorbed the oil.
- Pour the boiling water over them and simmer for 1 hour, or until the lentils are soft.
- Meanwhile cream the butter with a wooden spoon and beat in the parsley, a squeeze of lemon juice and a little salt to taste. Chill until firm.
- Season the lentils with salt and pepper to taste. Stir in a little parsley butter.
- Serve with a good knob of butter on top as a garnish.
INGREDIENTS
- 4 tablespoons Cooking oil
- 2 clove garlic, crushed
- 2 small onion, finely chopped
- 200 gram orange lentils
- 800 ml boiling water
- Salt and freshly ground pepper
Parsley Butter :
- 100 gram softened butter
- 2 tablespoon finely chopped
- Parsley lemon juice
