Preparation Method :
- Place the drained lentils in a large pan with water, bring to the boil. Reduce the heat, cover the pan and simmer until tender.
- Mix the cream, yogurt and corn flour in a bowl and stir into the lentils.
- Heat the ghee or oil in a large pan, fry the onion, ginger, green chillies and the tomato for about 3 -5 mins or until the onion is soft.
- Add the ground spices with salt and fry for 1-2 minutes. Stir into the lentil mixture and mix well. Transfer to a warm serving dish.
- Heat the ghee in a frying pan over a low heat and fry the garlic slices and remaining chillies until the garlic slices are golden brown. Pour over the lentils just before serving.

- 50 grams Cooking oil
- 100 ml double cream
- 100 ml plain yogurt
- 150 grams black lentils, soaked
- 60 grams red split lentils
- 1 teaspoon corn flour
- 1 onion, finely chopped
- 2in piece fresh root ginger, crushed
- 3 garlic cloves, sliced
- 4 fresh green chillies, chopped
- 1 tomato, chopped
- ½ teaspoon chilli powder
- ½ teaspoon ground turmeric
- ½ teaspoon ground cumin
- Salt
- Coriander sprigs
- Fresh red chili, to garnish
