CREAMY BLACK LENTILS

Preparation Method :

  • Place the drained lentils in a large pan with water, bring to the boil. Reduce the heat, cover the pan and simmer until tender.
  • Mix the cream, yogurt and corn flour in a bowl and stir into the lentils.
  • Heat the ghee or oil in a large pan, fry the onion, ginger, green chillies and the tomato for about 3 -5 mins or until the onion is soft.
  • Add the ground spices with salt and fry for 1-2 minutes. Stir into the lentil mixture and mix well. Transfer to a warm serving dish.
  • Heat the ghee in a frying pan over a low heat and fry the garlic slices and remaining chillies until the garlic slices are golden brown. Pour over the lentils just before serving.

INGREDIENTS

  • 50 grams Cooking oil
  • 100 ml double cream 
  • 100 ml plain yogurt
  • 150 grams black lentils, soaked 
  • 60 grams red split lentils 
  • 1 teaspoon corn flour 
  • 1 onion, finely chopped 
  • 2in piece fresh root ginger, crushed
  • 3 garlic cloves, sliced 
  • 4 fresh green chillies, chopped
  • 1 tomato, chopped
  • ½ teaspoon chilli powder 
  • ½ teaspoon ground turmeric 
  • ½ teaspoon ground cumin
  • Salt
  • Coriander sprigs 
  • Fresh red chili, to garnish
